Hot Chicken Dip

This is one of those great dips to take to parties or for a family gathering!  And it’s filling as it has chicken breast in it.

One thing I really like about it is you throw it all in the crock pot and can be done with it.

Ingredients

3 cans chicken breast
8 oz cream cheese
8 oz hot pepper cheese (or more regular velveeta)
1 1/2 C Velveeta cheese
2 cans cream of chicken
1-2 cloves garlic
12 oz sour cream
**you can also add peppers to it if you like some more spice**

Directions

Cut cheese into cubes and melt in crock pot, add rest of ingredients and mix together.  If cooking on high to get it hot and melty make sure you watch the cheese so it doesn’t “burn”.  Turn to low once everything is mixed and heated.

Serve with tortilla chips.

Cheesecake Cookie Dough or Brownies

This recipe can be made a few different ways.  You can have:

Cookie dough, cheesecake, cookie dough.
Brownie, cheesecake, cookie dough.
Cookie dough, cheesecake, brownie.
Brownie, cheesecake, brownie.

So much fun to make it different ways!  And so easy and good! Like most things I do when I am looking for a recipe I find a few I like and then edit a couple together to get what I want.  This recipe I haven’t made for a while and really should.

Ingredients

2 pkg of what you want the bottom layer and top layer to be – Roll of chocolate chip cookie dough, boxes of brownie mix.
4 pkg (8 oz) cream cheese – softened
1 C sugar
1 tsp vanilla
1/2 C sour cream
3 eggs
2 squares semi sweet baking chocolate

Directions

Pre-heat oven to 325 and spray a 13×9 baking pan.

Brownie Layer – if making bottom layer brownies mix the batter as directed on box and bake 20-25 min until middle is almost set, you still want it under baked.

Cookie Layer – if making it a cookie layer on the bottom open cookie dough and press into bottom of pan.  bake until cookie is almost done but not quite.

For the filling – Beat cream cheese, sugar & vanilla in a bowl with mixer on medium until blended.  Add sour cream and mix well.  Add eggs one at a time mixing on low after each one.

Pour filling over the bottom layer in pan.

Top layer Cookie – cut slices of dough and place on top of filling.  Does not need to cover the entire thing.

Top layer Brownie – Make brownies according to box, drop globs of brownie on top of filling, does not need to cover the entire thing.

Bake 40 min until center is almost set.  Run a knife around the edge of the pan, refrigerate at least 4 hours.

Melt semi sweet chocolate and drizzle over cheesecake, refrigerate for 15 min.  Can also use caramel!

 

Chocolate Walnut Crumb Bars

This is a bar cookie I never appreciated when I was younger!  Now I love them.  When I make them again I will take pictures but for now I really just wanted to get the recipe up for those asking for it.

These are bars my mom used to make all the time but as there are fewer people to bake for she seems to make more cookies the grandkids like.

Ingredients

2 sticks butter – softened
2 C flour
1/2 C sugar
1/4 tsp salt
2 C semi sweet chocolate chips
14 oz sweetened condensed milk
1 tsp vanilla
1 C walnuts (chopped)

Directions

Mix until together butter, flour, sugar and salt, until crumbly.
Press 2 cups of the crumbly mix into a 13×9 pan and bake at 350 for 10-12 min.
Warm 1 1/2 C chips and condensed milk (do not boil, mix low) stir in vanilla.
Spread chocolate mixture over crust.
Stir walnuts and rest of chocolate chips into the remaining crumb mix and spread over chocolate filling.

Bake at 350 for 25-30 min until center is set (you can shake to test it)  Cool and cut!

 

Easy Cake Cookies

These cookies are easy to make when you need something quick.  You can do any flavor you want too!  I have made mostly lemon cookies with it.

1 Box Cake Mix
1/2 C oil
2 Eggs

Mix all together, shape into 1″ balls.  Flatten with glass dipped in flour (can also use sugar).  Bake 6-8 min at 375.

You can always add chocolate chips to it or other things!

Microwave Peanut Brittle

Yes, you can make peanut brittle in the microwave and it’s SO easy and so good!  This recipe came with an OLD microwave cookbook!  Did you know back when they fist came out they came with cookbooks?  Crazy I know!  You could also cook a whole turkey in the microwave.

This recipe my mom and I have been making for YEARS, and have had people actually beg for us to make it for them.  Mostly because they have tried it and couldn’t get it to turn out.  First thing I had to do is adjust the times as the microwaves then are a lot different from now.

I am going to warn you ahead of time, have EVERYTHING ready as it’s quick and you need to stir and add things fast.  Make sure your pan you put it on is ready as well so you can pour fast.  Sometimes having a 2nd set of hands to help is best, but I have done it by myself as well.

Ingredients

1 C sugar
1/2 c corn syrup – light
1 C raw spanish peanuts
1 tsp butter
1 tsp vanilla
1 tsp baking soda

Have a 2 quart glass bowl you can microwave and a buttered cookie sheet or jelly roll pan ready.

Instructions

  • In your 2 qt bowl combine sugar & syrup and stir.
  • Heat at high for 3 min. Take out, add peanuts, stir well.
  • Heat on high for another 3 mins.  Take out, add butter & vanilla, stir well.
  • Heat 1 min on high.  Take out, add baking soda and stir gently until light & foamy.
  • Pour quickly onto buttered cookie sheet and spread thin (we bang it on the floor, drop it etc)

Cool and break.  Just remember to pour FAST, it starts to cool and will harden quickly.  I use a rubber spatula to get it all out too!
