Easy Cake Cookies

These cookies are easy to make when you need something quick.  You can do any flavor you want too!  I have made mostly lemon cookies with it.

1 Box Cake Mix
1/2 C oil
2 Eggs

Mix all together, shape into 1″ balls.  Flatten with glass dipped in flour (can also use sugar).  Bake 6-8 min at 375.

You can always add chocolate chips to it or other things!

Oatmeal Chocolate Chip Cookies

I am hoping to add pictures at a later time but I have so many people asking for recipes and I don’t know how much baking I will do, I decided I will at least get the recipes out there!

I am going to say right off I am normally NOT a fan of Oatmeal cookies.  But these… these are like crispy, chewy, buttery surprises.  The secret ingredient?  Rice Krispies!  They make them SO good!

First thing I am going to say is, if there is vanilla or cinnamon in a recipe I am known to toss a little more in than the recipe calls for.  Just a splash or pinch more.

Ingredients

2 sticks butter – soften
1 tsp vanilla
1 tsp baking soda
1 tsp salt
1 C brown Sugar – packed
2 C Rice Krispies
1-2 C chocolate chips – I use milk, sometimes semi.
2 eggs
2 C flour
1 tsp baking powder
1 C sugar
1 tsp cinnamon
2 C oatmeal

Instructions

There is no right or wrong way to mix this, I do it different every time, but I always add the oatmeal, rice krispies and chocolate chips at the end.  So mix it up, drop spoonfuls onto a baking sheet and bake at 350 for 8-12 min.

Lemon Burst Cookies

This was a really easy cookie to make, I was looking for a lemon cookie for Thanksgiving, something bright and tart!  Mike loves lemon stuff and is always happy when I make lemon cookies.  I love the smell of making lemon cookies.

Ready for Holiday Baking?

For those that know me know I am a baker at heart.  I love to bake, it relaxes me.  Thing is I go a bit crazy in the month of December.  I declare December my holding baking and sharing month.  I bake until I am sick of it and can’t picture myself in the kitchen another day and bring everything I make into work.  Sure I leave some at home for the kids and Mike, but not a lot.  I myself don’t eat a lot of it myself.

Why do I go crazy in the month of December?  Well like I said it helps with my stress levels.  Sure most would think me staying up until all odd hours would make me more stressed but it doesn’t.  I think it helps me sleep actually.  I go to bed tired instead of tossing and turning and thinking of what needs to be done tomorrow.

Do I let my kids help me?  HECK NO!  Remember I said it helps with my stress!?  Kids+kitchen = more stress!  I love them and I know they want to help, but really they just get underfoot.  I am usually making multiple things at once and work at a fast pace.  One think I love to do is make fudge on the stove, peanut brittle in the microwave (yes the microwave) and cookies in the oven!  There is nothing like making 3 things at once…. yeah I love to multi task!  So I don’t start the baking until the kids go to bed, my time is between 9 pm (if I am lucky) and midnight…. sometimes rolling into 1 or 2 am.

Every year I make a few old favorites, throw in some new ones that were popular last year and try out a few brand new ones.  And I do take requests from co workers for cookies they miss or haven’t had in a while.  They know when I bring in my big round blue Tupperware it will be a good day (not for the diet though)

I will post all my recipes as I go this year, even though I may be a little behind in it, but I promise to take pictures and post recipes!  I hope I can encourage some of you to start baking this year and sharing your goodies with coworkers and neighbors.  There are actually some out there that don’t bake, or don’t have time for baking.

Giant S’mores Cookies

Today was food day at work and I wanted to make something wonderful.  I have kind of slacked the last few food days and picked something up at the store… plus I knew I needed something sweet for here.  So I was checking out my blogs (see listed on the right) and found a few things I wanted to try, then I found a couple NEW blogs!  I was cruising around and saw a picture of these cookies and decided right then and there I had to make them!

Well let me tell you, it caused an uproar at work.  I made a double batch so Mike and I could both take some to work and they went over well at both places.  But at my workplace?  I think people were ready to fight for a cookie!  I can’t even explain the chaos it caused!  So if you really want to impress someone make up a batch of these!
