1st thing… I am sorry there are not many pictures of putting it together, I had to throw this together in 20 min before we had to run off to Connor’s 3rd grade concert. I am lucky I remembered to take pictures before we ate it! We were hungry by the time we got home!
Spaghetti is a favorite in this house and sometimes I just get tired of it. But I love pasta. So when I am tired of spaghetti but still want pasta and have a little extra time I make Pasta Bake. Which is a lot like spaghetti except I put it in the oven and it has CHEESE melted all over it. gooey, yummy cheese!
There really is no recipe for this, take your favorite pasta, take your favorite sauce throw in some meat if you want or don’t if you don’t want it. You can use different cheeses if you want too. Make it your own and change it until you find one that is divine to you! Mine has lots of cheese on it! Oh and yes…. it’s a lot like Lasagna but faster. That is my absolute favorite thing on this planet (close second is Salmon) I use to have lasagna every year for my birthday and if I could get my mom to make it for me now on my birthday I would. But I don’t think begging works much with her anymore now that I cook myself. But I can’t make it like her. Her’s is the BEST to me. Maybe next year I will try since I will be 35… 35!!! OMG… 35…. I guess I better because saying I am going to have my mom make it for my 40th just sounds…. wrong!
Yes I am back! Found my camera… which was where I thought it was but for some reason the men/boys in my family couldn’t find it. Oh well, I know next time to look myself!
So Spaghetti sauce, seems like a simple thing. I know a lot of people who use the kind out of a jar, actually I think a lot of people I know use it out of a jar. And I am talking about Prego, Ragu… you know what I mean. I have tried to use them and my kids hate them, I don’t even really like them. I am not sure what it is about them I don’t like, maybe I am just used to my mom’s?
I know some people get really into their spaghetti sauce and use real tomatoes, I just don’t have the time or patience to do that or to can it! So here is my basic recipe, it’s nice because by itself it’s good or you can add things to it that cater to YOUR tastes! You can add fresh veggies to it, no problem!
I use Hunts products and love them, if you like a different tomato sauce/paste use that, if you want more spice throw more in. This is just somewhere to start, tweak it to what you like. But I have been eating this sauce for 30+ years and always go back to it. I even had my kids not eating my spaghetti because they didn’t like the sauce until I finally called my mom and asked her for her “recipe”
So I have been in a cooking/baking mood lately and just want to get in the kitchen. So what’s the problem? Where are all the goodies? Well… thing is we got Dexter Season 4 over the weekend and as soon as the kids go to bed we try and get an episode in!
I have lists and lists of things to make, Mike even went out and got me some of the stuff I need… but now I just need to finish Dexter. I have made some salsa, actually 2 salsas in the last couple weeks. I know… that isn’t the same as dessert, or meals.
Tonight I made Tomato sauce with onion and butter which I got over at the Smitten Kitchen, one of my FAVORITE food blogs. Her pictures you make you want to jump in the kitchen!
Hopefully at some point I will post pictures of my creations, but let us start slow
So here is the recipe, mine was a bit light and watery and I blame it on the cheap (generic) tomatoes Mike got me, so I did add some canned tomato sauce to thicken it up more and it did work. Boys LOVED it!

Tomato sauce with butter
I doubled the recipe to fee all 6 of us and we had lots of left overs.
28 ounces whole peeled tomatoes from a can (don’t skimp get the good ones)
5 tablespoons unsalted butter
1 medium-sized yellow onion, peeled and halved
Salt to taste after
Put all except salt in a saucepan, I used a 3 quart, and bring to a simmer on medium heat. After about 10 min I lowered the heat and kept it at a low simmer for about an hour. During that time I stirred and squished the tomatoes against the side of the pan. My tomato wasn’t as squished as I wanted it so I used my Mix and Chop from Pampered Chef to take care of it. Remove the onion and salt for taste.
I put the onion with some of the chunkier sauce in a separate bowl for Mike, he loves that kind of stuff and he loved the big pieces of onion with the sauce.
All the kids gobbled it up! We used Angel Hair pasta. This I will make again, not only did the kitchen smell great but the sauce was so light, but it just added that nice touch, not heavy at all.
