Steak and Eggs
Okay first thing I am going to tell you is we used Eye of Round. Yes it’s a tougher steak but it’s also cheap! We got 2 for $4 and were about 4 oz each. Tenderizing it or marinading it works best to lose some of the toughness but we didn’t do that… next time I will. But if you want cheap, go ahead and try it, it’s also a really lean piece of meat!
We had steak, 2 over easy eggs (which makes even the toughest piece of meat taste better) and some brussels sprouts. It was a good dinner, filled me up for sure and even had a salad on the side. Anyone who thinks this plan we are on doesn’t fill you up, well they are wrong!
1 lb Brussel Sprouts
2 Eye of Round Steaks
Salad (on Ideal Protein you can use any of the Walden Farms dressings, I like caesar)
Sea Salt and Pepper for taste
Meat and Egg Directions: Season the beef and cook up on the stove top over medium. Once done, only takes a few minutes each side, cook up a couple over easy eggs. Not sure how to make them? Spray a little olive oil in the pan, crack an egg and once the white is set flip being careful and let cook on the other side till whites are set but the middle is still soft.
Brussel Sprouts – Rinse, remove outer leaves and cut into 1/4 pieces. Place in a bowl. Drizzle your alloted Olive Oil over and toss. Add salt, pepper and some garlic powder. Get your pan nice and warm, spray some olive oil and toss in the brussels sprouts. I let them get a little brown over medium heat and then covered them with a lid. This I think helps them cook faster. After 3 mins I stirred them and added 1/4 cup of water and covered again. Keep checking them every few minutes and stir. I ended up added water twice, cook for about 8-10 minutes.
