Peanut Butter Caramel Chocolate Christmas Crack

Okay so I totally renamed these, but they are a lot like the Christmas Crack I made last year but this one has layers and peanut butter chips!  Plus I really like asking people if they want some crack, try it you will like it too! lol

The original recipe is here http://picky-palate.com/2010/10/18/chocolate-peanut-butter-and-caramel-club-bars/

If you are looking for something easy to make, salt and sweet and really good you have to try these!  The original recipe was made for an 8×8 pan but the night I wanted to make these Mike was in bed and I couldn’t find my 8×8 (he put it somewhere) so I altered the recipe so I could make a 13×9 pan.  Which really once you try these you will be glad you made a 13×9 pan size!  Also, I think mine have more caramel in them than the original recipe… but what could be bad about that?

Now comes the chips!

Yum…. caramel!

Peanut Butter Caramel Chocolate

Christmas Crack

Club Crackers
3 sticks butter
1 1/2 cup packed light brown sugar
1 bag peanut butter chips
1 bag semi sweet chocolate chips, melted in microwave

Line a 13×9 baking pan with foil and sprayed with cooking spray.

Place club crackers in the bottom of an 13×9 inch baking pan to form a bottom “crust”.  Sprinkle 1/2 bag of peanut butter chips on crackers.

Melt butter and brown sugar in a saucepan over medium high heat.  Stir for about 4 min until smooth and the creamy caramel forms.  (see picture above) stirring constantly for 4 minutes, until bubbly, smooth and creamy caramel forms.  Pour 1/2 of the caramel over the peanut butter chips.  Add another layer of the crackers over the caramel, then rest of the peanut butter chips and rest of the caramel.  Top with a final layer of crackers and spread with melted chocolate.

I put them in the fridge overnight and pulled them out and cut them in the morning.  You don’t have to put them in the fridge but I thought maybe they would cut easier.
