Crock Pot Roast and Rice

There is nothing better than throwing something in the crock pot and not thinking about it until dinner time.  It lets you not think about dinner all day and then it’s like, Presto, dinner is done!  One thing I love is roast.  I have never cooked one any other way than the crock pot.  Usually what happened is on Sunday we would have a roast, maybe potatoes, rolls and a veggie.  Then on Tuesday or Wednesday we would dig the left over roast out with the gravy it automatically makes when cooked, shred it up and serve it over white rice.

But my boys, they don’t like roast all that much, so on Sundays they didn’t eat a lot of meat.  But they LOVED and raved over the leftovers.  So my mom had a brilliant idea.  Once the roast is done cooking, put rice in the crock pot and have roast and rice that night and you will still have it left to have leftovers later in the week.

So this is that recipe.  Easy Roast and Rice.  Hopefully it turns into a favorite around your house because it’s so easy and delicious to make.  And remember you can change-up this recipe to satisfy your tastes.  You can do roast with potatoes and carrots in it if you want.  You don’t HAVE to do the rice with it.  I do my roast the same way every time even if I don’t add the rice.

Roast and Rice

2-3 lb roast
3 cans Cream of Chicken/Cream of Mushroom (I use one mushroom and two chicken)
1 can of water
Onion (as much or as little as you want, I use 1 tbsp Tastefully Simple Onion Onion)
Salt and pepper
1-3 tbsp Worcestershire sauce
Minute rice

Empty the 3 cans of soup into the crock pot and mix with the can of water, put in the Worcestershire sauce, onion and a pinch or two of salt and pepper.  For the Worcestershire sauce it’s all up to you, some people really like it and some don’t.  I like enough to make my mix look brownish.  Add your roast, cover and cook on high for 4-5 hours, if it’s still awhile before you want to eat just turn it on low for an hour.

The Rice

– 15 min or so before you are ready to eat take the roast out and put it on a plate, cover with aluminum foil.

Now if you don’t have 6 or more people to feed or don’t want a lot of left overs then add your rice at this point.  I don’t have exact measurements but you want enough liquid for all the rice to soak up.  I have added pictures to show you want it should look like after adding the rice.  If I had to guess, at least 2-3 cups.  Cover and let cook for 10-15 min until rice is done.  You may want to crank the crock pot back up to high also.

If you are like me and have not only 6 people to feed but want leftovers for another dinner or some lunches then follow these directions.  Tonight (and in the pictures) I added 3 extra cups of water after I took out the roast.  Crank it up to high and add 5-6 cups of rice, cover and let cook for 15 min.

I have played around with this recipe a lot to get the perfect amount of rice left over.  After dinner tonight we will shred up the meat and put it with the left over rice.  This will give us 4-5 lunches or another whole dinner.
