Spicy Sausage Dip

I love a good dip, it can be a snack and sometimes a meal!  I made this for our Tailgating food day at work.  I don’t like too spicy of food but I liked this one because you control how spicy it is.

The recipe is for if you are going to serve it right away, I made it the night ahead so I have directions also for that.  Enjoy!

Spicy Sausage Dip

1 (16 oz.) package spicy/zesty sausage
1 (15 oz.) can diced tomatoes with green chiles, undrained
2 (8 oz.) packages cream cheese – softened
Hot sauce, to taste
Ritz Crackers
Additional seasonings you can add: Salt, Pepper, Cayenne Pepper, Cumin

Making to eat same day:

In a large skillet over medium heat, cook the crumbled sausage until browned.  Drain off any excess fat.  Reduce the heat to medium and mix in the tomatoes, cream cheese, and hot sauce.  Continue to cook, stirring frequently, until the mixture is warmed through and the ingredients are well blended.  Taste and adjust seasonings as necessary.  Serve warm.

Making the night before:

Cook the sausage same as above and drain excess fat.  Grab a bowl and mix the cream cheese, tomatoes and sausage together till blended.  Taste and adjust seasonings as necessary.  When ready to serve you can either put in a crock pot to warm or microwave for 4-6 min and stir every min.

Serve with Ritz crackers
