Avocado Spread


A new food to my kitchen this summer has been the Avocado.  I don’t care for it much myself but my husband is in love with it.  So I do what I can to make him happy and find different recipes using it.  I have put it in a lot of salsa but I knew he liked spreads at different sandwich shops we have visited.

This one I found on Food Networks website, Rachel Ray made it, but I have tweaked it a bit based on what I had on hand and it didn’t have a strong avocado taste with using just one, so we upped that.  Mike has tried it plain and liked it (so did Emma… weird!) but he hasn’t had the chance to have it on a sandwich yet.

Avocado Spread

2 ripe Hass avocados, halved, peeled and pit removed
4 garlic cloves, peeled
1/3 cup fresh lemon juice
2 small shallots, peeled
2 teaspoons kosher salt
½ cup canola oil
2 tablespoons extra-virgin olive oil

In a blender puree the avocado, lemon juice, garlic, shallots and salt until smooth. With the blender running, slowly drizzle in the canola oil and olive oil until combined.
