Plain ‘ol Salsa


My husband Mike LOVES salsa.  When he started asking me this year about making some from scratch I looked online and found tons of recipes.  After trying a few I came up with a basic recipe.  I can add other things to this depending on his salsa mood.  So here is a base to start with, add and remove what you want!

Plain ‘ol Salsa

4 cans diced tomatoes
1 green pepper
1 red pepper
4 cloves garlic
1 white onion
2 shallots
1 jalapeno pepper
1/2 tsp cumin
1/2 tsp cayenne pepper
Juice of 1 lime
salt and pepper for taste

Chop up all/ veggies and put into blender.  I use this handy chopper from Tupperware but a blender works great too!  Blend until your desired thickness.  Put those veggies in a bowl.  Drain canned tomatoes and put in blender, puree until desired thickness, put in bowl with veggies.  Put in spices and lime juice and stir throughly.

This is a very basic salsa, you can add other things to it such as black beans or corn.  Of course when you want some more kick add another jalapeno!
