Giant S’mores Cookies


Today was food day at work and I wanted to make something wonderful.  I have kind of slacked the last few food days and picked something up at the store… plus I knew I needed something sweet for here.  So I was checking out my blogs (see listed on the right) and found a few things I wanted to try, then I found a couple NEW blogs!  I was cruising around and saw a picture of these cookies and decided right then and there I had to make them!

Well let me tell you, it caused an uproar at work.  I made a double batch so Mike and I could both take some to work and they went over well at both places.  But at my workplace?  I think people were ready to fight for a cookie!  I can’t even explain the chaos it caused!  So if you really want to impress someone make up a batch of these!

The original recipe was made in Muffin top pans, I don’t have them (they are now on my list of things I must get) just flatten the cookies a bit on your cookie sheet and press your s’more toppings slightly into the dough.

Giant S’mores Cookies

2 sticks softened butter
1 Cup packed light brown sugar
3/4 Cup granulated sugar
2 large eggs
1 Tablespoon pure vanilla
4 Cups all purpose flour
1 teaspoon kosher salt
1 1/2 teaspoons baking soda
1 1/2 Cups chocolate chips
3 regular size Hershey’s Chocolate Bars
3 Full Graham Crackers
5-6 Large Marshmallows cut into fourths

Preheat oven to 350 degrees.  Beat butter and the sugars until light and fluffy.  Add eggs and vanilla until combined.

Put flour, salt and baking soda into a large bowl and combine.  Slowly add dry to wet ingredients along with the chocolate chips.  Mix until  combined.  Scoop a heaping 1/4 Cup of cookie dough into muffin top pan cups (or on the cookie sheet).  Press down then gently press chocolate bar squares (2 pieces), graham cracker pieces and marshmallow slices on top of cookie dough.  Bake for 11-13 minutes or until edges are just turning brown.  Let cool for 5 minutes before removing from pan.

Wanna make into bar cookies?  Use the same recipe as above and spread mixture in a jelly roll pan.  Press down chocolate bar, graham cracker and marshmallows.  Bake for 20 min until edges are brown at 350.

    When I made the bar cookie I did use the mini marshmallows as my kids had eaten all the big ones!

    Plus with the small ones on the bar cookie you can sprinkle more on the top 🙂 Which is always a bonus! Glad everyone liked them!

    AWESOME!!! They were easy to make and my kids and boyfriend agree with me that these are awesome. The only thing I changed was to use a few handfuls of mini-marshmallows instead of cutting up large ones. :o)
